  • 2.5 cups strawberries (hulled and quartered for bite-sized pieces)
  • 1/4 red onion (very thinly sliced to prevent overpowering)
  • 3/4 cup feta (I prefer President Crumbled Feta for its tangy flavor)
  • 1/3 cup mint
  • Pinch red pepper flakes
  • 1/3 cup Greek yogurt (I use Fage Total 5% for a richer, creamier base)
  • 3 tbsp apple cider vinegar
  • 1.5 tbsp honey
  • 1.5 tbsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil

Instructions

  1. Thinly slice the cucumbers into half-moons.
  2. Hull and quarter the strawberries into bite-sized pieces.
  3. Very thinly slice the red onion to minimize its strong flavor.
  4. Chop the mint leaves finely.
  5. In a mixing bowl, add Greek yogurt, apple cider vinegar, honey, poppy seeds, salt, black pepper, and olive oil. Whisk together until smooth and well combined.
  6. In your large mixing bowl, add the sliced cucumbers, quartered strawberries, sliced red onion, feta cheese, mint leaves, and red pepper flakes.
