- 1 pound chicken (dark meat preferred)
- 2 tablespoons fresh ginger (grated)
- 3 cloves garlic (minced)
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1 cup coconut milk
- 2 tablespoons brown sugar (or honey)
- 2 tablespoons fresh lime juice
- Salt and black pepper
Instructions
- In a mixing bowl, whisk together ginger, garlic, soy sauce, coconut milk, brown sugar or honey, lime juice, salt, and pepper until well combined.
- Cut the chicken into bite-sized pieces and add to the marinade. Mix thoroughly and refrigerate for at least 30 minutes (up to overnight for deeper flavor).
- Preheat your grill or grill pan over medium-high heat.
- Thread marinated chicken onto soaked skewers, leaving space between pieces for even cooking.
- Grill skewers for about 10 minutes, turning occasionally until cooked through and slightly charred.
- Serve warm with rice or salad.
