- 2 cups cooked chicken, diced

- 8 oz rotini or bowtie pasta
- 1 red bell pepper, diced
- ½ cup shredded carrots (optional)
- 2 green onions, sliced thin
- ½ cup mayonnaise
- ¼ cup sour cream
- ⅓ cup reserved pineapple juice
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
Instructions
- Cook the pasta in salted water until tender; rinse under cold water and drain.
- In a mixing bowl, whisk together mayonnaise, sour cream, pineapple juice, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
- In a large bowl, combine cooled pasta with chicken, pineapple tidbits, bell peppers, green onions, and carrots.
- Drizzle dressing over the mixture and fold gently until everything is coated.
- Refrigerate for at least one hour before serving to enhance flavors.
