- ¾ cup warm milk
- 1 large egg (room temperature)
- 1 tsp ube extract
- 6 tbsp unsalted butter (softened, 85 grams)
- 3¼ cup all-purpose flour (406.25 grams)
- ⅓ cup granulated sugar
- ¼ tsp salt
- 1 package instant dry yeast (8 grams or 2 ¼ tsp)
- ⅓ cup ube halaya jam
- ¼ cup brown sugar
- 1 tbsp ground cinnamon
- 1 tbsp unsalted butter (softened, 14 grams)
- ⅓ cup heavy cream
- ½ cup cream cheese (softened)
- 2 tbsp unsalted butter (softened, 28 grams)
- ½ tsp vanilla extract
- ⅛ tsp salt
- ⅔ cup confection sugar
Instructions
- In a stand mixer bowl, combine warm milk and yeast; let sit for a few minutes. Add egg, softened butter, and sugar; mix until blended.
- Gradually add flour and salt; mix until combined. Switch to dough hook and knead for 5-7 minutes until slightly sticky.
- Place dough in a greased bowl; cover and let rise in a warm place for 30 minutes or until doubled in size.
- For the filling, mix softened butter, brown sugar, cinnamon, and ube halaya jam in a bowl.
- Roll out dough on a floured surface into a rectangle (15×12 inches). Spread filling evenly over the dough.
- Roll tightly from one long end to form a log; cut into 9 equal pieces.
- Arrange rolls in a greased baking pan; let rise again for 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 21-23 minutes until lightly browned.
- Prepare frosting by mixing cream cheese, butter, vanilla extract, salt, and confection sugar until smooth.
- Spread frosting over warm rolls before serving.
