Ingredients
- 4 cups thinly sliced celery
- 1/4 cup toasted nuts (almonds, walnuts, or pistachios)
- 1/4 cup crumbled feta or goat cheese (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice or white apple vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash and trim celery stalks; slice them thinly on the bias.
- Toast chosen nuts in a dry skillet over medium heat until fragrant.
- In a mixing bowl, whisk together olive oil, lemon juice/vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
- Toss sliced celery with the vinaigrette in the bowl; fold in toasted nuts and cheese if using.
- Serve immediately on a platter or individual bowls.
