  • 1 1/2 cups uncooked sushi rice
  • 2 cups water
  • 2 teaspoons toasted black sesame seeds
  • 2 teaspoons sesame oil
  • 1/4 cup soy sauce
  • 2 tablespoons fruit juice
  • 1 teaspoon sugar
  • Nori sheets

Instructions

  1. Rinse the sushi rice until the water runs clear. Combine with water in a rice cooker or pot and cook until done.
  2. Mix cooked rice with toasted sesame seeds and sesame oil. Let cool slightly.
  3. Wet hands and shape about 1/2 cup of cooled rice into triangles or use a mold.
  4. In a bowl, combine soy sauce, fruit juice, and sugar until dissolved.
  5. Heat a skillet over medium heat with a little oil. Grill each rice ball for about 2-3 minutes per side until crispy.
  6. Reduce heat to low; brush one side of each onigiri with the soy mixture for caramelization.
