Ingredients
- 10 ounces cheese tortellini
- 12 ounces fresh broccoli florets
- 1/3 cup diced red onion
- 1/2 cup dried cranberries
- 5 slices cooked turkey bacon, chopped
- 1/3 cup chopped walnuts
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon white sugar
- Salt and freshly cracked black pepper to taste
Instructions
- Cook the cheese tortellini in boiling water according to package instructions until al dente. Drain and let cool.
- In the same pot, boil fresh broccoli florets for 2-3 minutes until bright green. Drain and rinse under cold water.
- In a large bowl, combine cooled tortellini, broccoli, red onion, dried cranberries, turkey bacon, and walnuts.
- For the dressing, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth; adjust seasoning to taste.
- Mix the dressing with the salad ingredients until evenly coated. Chill for at least 10 minutes before serving.
