Ingredients
- 10 tablespoons softened butter
- 2/3 cup light brown sugar
- 1/3 cup granulated sugar
- 1 egg + 1 egg yolk
- 3/4 teaspoon vanilla extract
- 1 2/3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon corn starch
- 1 1/2 cups semisweet chocolate chips (divided)
- 8 tablespoons softened butter (for frosting)
- 2 cups powdered sugar
- 1/4 cup cocoa powder
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract (for frosting)
- 1/2 cup sprinkles (for decoration)
Instructions
- Preheat your oven to 350°F and prepare a 9-inch cake pan with cooking spray and parchment paper.
- In a stand mixer, beat softened butter until fluffy. Add both sugars and mix well before incorporating the egg, yolk, and vanilla.
- In a separate bowl, whisk together flour, baking soda, salt, and corn starch; gradually add to the wet ingredients until just combined. Fold in 1 cup of chocolate chips.
- Press the dough into the prepared pan and sprinkle remaining chocolate chips on top. Bake for about 22-24 minutes until golden brown at the edges.
- Allow to cool slightly before removing from the pan; then cool completely before frosting.
- For frosting, beat softened butter until creamy; slowly add cocoa powder and powdered sugar while mixing on low speed. Add milk and vanilla extract; beat until smooth.
- Decorate with frosting around the edges of the cooled cookie cake and top with sprinkles.
