  • Yield: Serves approximately 12 people 1x

Ingredients

Scale
  • 10 tablespoons softened butter
  • 2/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 3/4 teaspoon vanilla extract
  • 1 2/3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon corn starch
  • 1 1/2 cups semisweet chocolate chips (divided)
  • 8 tablespoons softened butter (for frosting)
  • 2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/2 cup sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch cake pan with cooking spray and parchment paper.
  2. In a stand mixer, beat softened butter until fluffy. Add both sugars and mix well before incorporating the egg, yolk, and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, salt, and corn starch; gradually add to the wet ingredients until just combined. Fold in 1 cup of chocolate chips.
  4. Press the dough into the prepared pan and sprinkle remaining chocolate chips on top. Bake for about 22-24 minutes until golden brown at the edges.
  5. Allow to cool slightly before removing from the pan; then cool completely before frosting.
  6. For frosting, beat softened butter until creamy; slowly add cocoa powder and powdered sugar while mixing on low speed. Add milk and vanilla extract; beat until smooth.
  7. Decorate with frosting around the edges of the cooled cookie cake and top with sprinkles.
